DELICIOUS BANANA NUT MUFFINS (FOR ANY TIME OF THE DAY)

This nutty breakfast/afternoon snack is one of my all time favorites. I love eating them as well as baking them too! The best part is that they are super easy to make and delicious to boot. Read on to learn how to bake these lovely banana nut muffins!

Let's get started! Preheat your oven to 350 degrees.

Mash the bananas into a bowl containing the melted butter.

Mix in the sugar, egg, coffee, and vanilla.

Sprinkle in the salt, add the flour, and then the baking soda.

Add the flour into the bowl and mix. And then finally fold in the walnuts.

Scoop your mixture evenly into 12 prepared muffin tins. Bake for 25-30 minutes.

Wow! Wasn't that easy? I know it's a little hard to believe but it's true, these crazy good muffins can be made in a snap! Now here's the recipe.

Ingredients:

3 or 4 ripe bananas

1/3 cup of melted butter

1/2 cup of sugar

1 egg

1 teaspoon of vanilla

1 tablespoon of strong coffee or espresso

1 teaspoon of baking soda

a pinch of salt

1 1/2 cups of flour

and 1 cup of chopped raw walnuts

Directions:

1.) Preheat your oven to 350 degrees Fahrenheit.

2.) Melt the butter and then mash the bananas in the same bowl.

3.) Then add the sugar, egg, coffee, and vanilla.

4.) Sprinkle in the salt and then add the baking soda.

5.) Add the flour in and mix and then fold in the walnuts.

6.) Scoop the batter evenly into 12 prepared muffin tins. Bake for 25-30 minutes and enjoy!
