WOW THE CROWD WITH THIS LEMON RICOTTA DIP


I don't know about you, but everytime I'm at a nice gathering of some sort there is practically always a cheese plate. Sometimes the host will try to spruce things up by adding little banners with the names of the cheeses on them and even put out fancy knives to disguise the fact that this is just another cheese plate. Am I being too harsh? Maybe. But seriously though, if you know what I'm talking about then you will be glad to hear that I have solved the case of the boring cheese plate at last. Introducing the LEMON RICOTTA DIP! *ooooo! ahhhh!* I can say with certainty that this little appetizer will be the center of attention. The new member to the cheese plate family will be sure to please the whole crowd, satisfaction guaranteed. ;) The best part is that it takes just about 2 minutes to make. Ready? Let's make some dip!

Gather up all your ingredients.

Grab a medium mixing bowl and combine all of your ingredients with a whisk.

Pour your dip into a pretty little bowl and serve with crackers. I love the kind made with grains and dried fruit because they compliment the tang of the lemon SOOOO nicely. :) Now here's the recipe.

Ingredients:

1 15 oz. container of ricotta (for some reason I like the taste of the low fat kind, but it's completely up to you and your tastebuds)

6 tablespoons of lemon juice (about equal to the juice of 1 lemon)

Zest of a whole lemon

3 tablespoons of olive oil

3/4 teaspoon kosher salt

1/4 teaspoon black pepper

Directions:

1. In a medium sized mixing bowl whisk together all of the ingredients, starting with the ricotta and lemon. You want the texture of the dip to be light and creamy so be careful not to over whip.

2. With a spatula pour your dip into a bowl and serve with crackers. If you are not serving the dip immediately, cover the bowl with saran wrap and leave it in the fridge until you're ready to serve it to some very hungry guests.

How much simpler does it get? This dip is a delicious all-star that is perfect for any occasion, although I prefer to make it as a spring/summer appetizer. There's something about lemons that screams warm weather to me. But honestly, make this dip whenever you want. There are no rules here. :) Get ready to have the best party season ever because everyone is going to come knocking on your door asking for more dip. :)
