TRIPLE BERRY MUFFINS THAT WILL GIVE YOUR MORNING ROUTINE A BOOST!


We get it, mornings can be the worst. The alarm goes off and you just want to put your head under your pillow and stay in bed forever. But never fear! We think we found a cure to the morning blues with these *AMAZING* triple berry muffins. Scroll down to find out the recipe for motivation to get out of bed. :)

Gather together all your ingredients. The butter is not in this picture because it was defrosting. Sorry about that! Also, set your oven to 350 degrees Fahrenheit.

Wash the berries and sprinkle them with some flour and brown sugar.

Beat all your wet ingredients with a whisk.

Combine your wet ingredients with your dry ingredients. Then carefully mix in the berries so they don't get all mushy.

Using a regular-sized ice cream scoop, place a generous scoop into each muffin tin.

Bake them for 20-25 minutes and let them cool for 10 minutes once you take them out of the oven. And that's it! How easy was that? Check out the full recipe below.

Ingredients:

Dry-

1 1/2 cups all-purpose flour

3 tablespoons brown sugar

1 1/12 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

Wet-

1/2 cup vanilla almond milk

1 egg

1 container greek yogurt

1/2 cup softened unsalted butter

2 teaspoons vanilla extract

1/2 container of each type of berry you use (we used raspberries, blueberries, and blackberries)

Directions:

1. Preheat your oven to 350 degrees Fahrenheit.

2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a small mixing bowl.

3. Wash your berries in a strainer and then spoon about a tablespoon of flour and a tablespoon of brown sugar on top. The flour keeps your berries from sinking to the bottom of the muffin (just a little insider tip). ;)

4. Next, combine the egg, almond milk, greek yogurt, butter, and vanilla extract with a whisk in a larger bowl.

5. Put your dry ingredients into your wet ingredients and mix them together until combined with a wooden spoon.

6. Once your batter looks smooth add in the berries and carefully mix them in without crushing them.

7. Using an ice cream scoop, scoop the batter evenly into 12 muffin tins.

8. Bake for 20-25 minutes and let them cool for about 10 minutes after you take them out of the oven.
